Ingredients

  • 500 g
    vegan mock meat or vegetarian fish or tofu
  • banana leaves

Paste

  • 1 tsp
    vegetarian belacan powder or paste
  • 4 cm
    fresh turmeric
  • 4 cloves
    garlic
  • 75 g
    shallots
  • 1 pc
    big red onion
  • 1 tsp
    salt
  • 1 tbsp
    sugar
  • 2 tbsp
    rice flour
  • 2 tbsp
    tapioca flour or 1 portion vegan egg
  • 5 pcs
    dried red chilies
  • 5 pcs
    kashmiri chilies otherwise double the dried red chillies
  • 8 pcs
    makrut lime leaves
  • 2 pcs
    lemongrass
  • 200 ml
    coconut cream

Garnish

  • turmeric leaves
  • red chilies
  • calamansi lime

Instructions

  1. Blend all the ingredients for the paste with as little water as possible to form a thick paste.

  2. Mix the paste with crumbled vegan mock meat, vegetarian fish, or tofu.

  3. Scoop approximately 3 to 4 tablespoons of the Otak-otak paste onto banana leaves that have been roasted on a fire for easy folding. Seal with a toothpick if necessary.

  4. Steam or oven-bake it for about 15 minutes, then they are ready to serve. Garnish with turmeric leaves, red chilies, and calamansi.
