Pad Thai

Pad Thai

200 gflat rice noodles

1 cupbeansprouts
-
1 cupchives chopped
-
1 cupfirm tofu diced

¾ cupground peanuts

1½ cupsoyster mushrooms shredded

1 pctomato diced

5 clovesgarlic chopped finely

7 pcskaffir lime leaves

4 tbspcooking oil

1 tsppink salt
Sauce
-
3 tbspsoy sauce
-
¼ cupThai sweet chili sauce

½ pckey lime
-
½ tbspbrown sugar
Instructions

Cook rice noodles in a pot of boiling water for 4 minutes or according to instructions on the packet. Remove from pot and drain water from noodles. Leave aside.

Stir sauce ingredients together in a separate bowl.

Heat up wok on medium to high heat with cooking oil.

Fry garlic for l minute until it starts to brown.

Add peanuts, tomato, lime leaves and salt and fry for 1-2 minutes.

Add mushrooms and tofu, and fry for 1-2 minutes or until mushrooms just start to wilt.

Add beansprouts and chives, bring down the heat a little, and proceed to stir ingredients together briskly.

Add rice noodles and sauce, and stir everything up until the noodles and sauce are evenly distributed amongst the other ingredients.

Serve immediately.
