“Shrimp” Fritters

1 tspvegetarian dried shrimp

⅓ tspturmeric powder

water as needed

2 cupsvegetable oil for deep frying
Instructions

In a large bowl, combine all the ingredients and adjust the water until it reaches a thick "pancake batter" consistency. Let it rest for 20 minutes.

Preheat your oil in a deep fryer, large wok, or pan. The oil is ready when it starts to bubble, and a drop of batter in the oil sizzles.

Use a large Chinese soup spoon or a 1/3-sized cup to scoop the batter, then deep fry the scoops. They are ready once they start floating to the top of the oil. Remove them from the oil and let them rest on a cooking tray. Continue frying until you run out of batter.

Serve this hot with chili or tomato sauce on the side. Or chopped and mixed in with Chef Dave's Mee Goreng Mamak for an authentic Mee Mamak dish!
