Healthy Green Salad with Strawberries & Sweet Garlic Mayo

ProVeg South Africa is sharing the secrets to creating an epic plant-based Braai Day! Save this fresh and tasty Green Salad recipe ahead of Heritage Day, 24 September.

Green Salad with Strawberries & Sweet Garlic Mayo

Ingredients for the salad:
  • ½ cucumber
  • 250g strawberries
  • ½ bunch of celery
  • 100g rocket
  • 1 red onion
  • 60g cashews
  • 100g vegan feta cheese (f.e. Violife)
  Ingredients for the dressing:
  • 2 strawberries
  • 1 garlic clove
  • salt & pepper
  • 2-3 tbsp. olive oil
  • 2 tbsp. balsamico vinegar
  • 1 tbsp. agave or maple syrup
  Instructions:
  • Wash the cucumber, celery, strawberries and the rocket with water. Peel the cucumber if you want.
  • Take 2 strawberries aside for the dressing.
  • Cut the cucumber in half lengthwise and then in small half moon slices. Cut the celery, onion and strawberries into small pieces. Mix all the ingredients with the cashews and add the rocket. Add the feta cheese to the salad
  • Cut the garlic and 2 strawberries in pieces. Use a blender to mix all the ingredients for the dressing. Drizzle some of the dressing over the salad and serve the rest of the dressing in a small sauce mug.
