Mira Weiner’s Jackfruit Loaded Sweet Potatoes Recipes

The Jackfruit Challenge

V-foods supported our #Veganuary2021 campaign in South Africa, sharing some of their exciting products with us. V-foods makes it possible for South Africans to enjoy quality vegan products such as Nature’s Charm, Chef’s Choice and the well-loved Violife cheese. We were most interested to see what our favourite foodies could make with Nature’s Charm Young Green Jackfruit. Mira responded to our Jackfruit Challenge with these jackfruit loaded sweet potatoes. Jackfruit Loaded Sweet Potatoes

Serves 3 Prep time: 15 min Cooking time: 1 hourINGREDIENTS 3 large sweet potatoes 1 tin jackfruit (300g) 1 onion, finely diced 2 gloves garlic, minced ¾ cup sugar free BBQ sauce (homemade recipe below) Olive oil for cooking Homemade BBQ sauce: ½ cup sugar free tomato sauce (I use @mr_organic) ¼ cup filtered water 2 tbsp apple cider vinegar (with ‘the mother’) 1 tbsp lemon juice 1 tbsp sweetener of choice (coconut sugar / maple syrup / agave /) 1 tbsp wholegrain mustard (I use @biona) 1 tbsp tamari ½ tsp smoked paprika ½ tsp garlic powder ½ tsp onion powder ¼ tsp coriander ¼ tsp cumin Few drops of liquid smoke Salt and pepper to taste Blend all ingredients together until smooth. To serve: Squeeze of fresh lime juice Chopped avo Vegan mayo or cashew sour cream Coriander leaves Sesame seeds METHOD Preheat oven to 300C. Wash the sweet potatoes, prick them a few times with a fork and bake for 1 hour or until cooked through. Drain and rinse the jackfruit, pat dry and shred it with a fork or use your hands. In a frying pan, heat the olive oil and fry the onion and garlic. Add the shredded jackfruit and cook until some of the edges start to crisp up. Pour in the BBQ sauce and cook for a further 10-15 minutes to allow the sauce to thicken up. Once cooked, remove the sweet potatoes from the oven and slice a T into the top and mash some of the inside to make space for the filling (you can take some of the sweet potato out if too much and keep for baking – sweet potato brownies are so yum). Scoop the jackfruit mixture into the slit of the sweet potatoes, add the chopped avo, squeeze of lime juice, coriander leaves, sesame seeds and drizzle with vegan mayo or cashew sour cream. Enjoy!
