Ingredients

  • 2 sections
    lotus root
  • 1 pc
    carrot
  • 1 pc
    small sengkuang jicama
  • 4 pcs
    red dates
  • 2 l
    water
  • peanuts handful, soaked
  • chickpeas handful, soaked
  • kidney beans or small red beans handful, soaked
  • salt to taste
  • mushroom seasoning to taste

Instructions

  1. Soak the peanuts, chickpeas, and kidney beans (or small red beans) in water overnight or for 4-8 hours.
  2. Peel and cut the lotus root, carrot and sengkuang into desired shapes.
  3. Place all ingredients into a pressure cooker. Cover the ingredients with water and cook on high pressure for 40 minutes. Alternatively, in a regular pot, bring to a boil and then simmer on low heat for 1.5 hours.
  4. After cooking, boil the soup on high heat until the liquid reduces by 10-20%. This will concentrate the flavors and make the soup richer.
  5. Add salt and mushroom seasoning according to your preference. Stir well and adjust seasoning if needed.
