Pumpkin Kaya

Ingredients

  • 750 g
    pumpkin
  • 60 g
    cooked rice
  • 230 g
    water
  • 50 g
    coconut sugar
  • pandan leaves a few

Instructions

  1. Peel and slice pumpkin. Bake sliced pumpkin with some pandan leaves at 180℃ for 20 minutes or until cooked. Discard pandan leaves.
  2. In a heavy duty blender, puree pumpkin, rice and water together until smooth.
  3. Melt sugar with some pandan leaves over low heat. Pour in pumpkin puree.
  4. Cook pumpkin puree over low heat for about 30 minutes until thickened.
  5. Discard pandan leaves. Pour kaya into a glass har.
  6. Store in refrigerator.
