2 pcseggplants medium-sized

1 tspgarlic minced
For the Sauce

2 tbsptomato sauce

2 tbspsoy sauce

2 tbspsugar

3 tbspwhite vinegar

8 tbspwater
For the Thickener

1 tbspcornstarch

3 tbspwater
Instructions

Cut the eggplants into your desired shapes. Soak the pieces in a bowl of water with 2 tbsp of vinegar for 5-10 minutes. This helps to retain the colour of eggplant

In a bowl, mix together the tomato sauce, soy sauce, sugar, vinegar, and 8 tbsp of water until well combined.

In a small bowl, dissolve 1 tbsp cornstarch in 3 tbsp water. Set aside.

4.Drain the eggplant pieces from the vinegar water solution. Steam them for about 5 minutes until they are tender but still retain their bright purple color. Avoid overcooking.
Cook the Dish

Heat a pan over medium heat and add 1 tsp of oil.

Stir-fry the minced garlic for 1 minute until fragrant.

Pour in the prepared sauce and bring it to a boil.

Add the steamed eggplant to the pan

Stir well to coat the eggplant with the sauce

Stir in the cornstarch mixture to thicken the sauce.

Cook for an additional 1-2 minutes until the sauce has thickened
