Ingredients

  • 2 pcs
    eggplants medium-sized
  • 1 tsp
    garlic minced

For the Sauce

  • 2 tbsp
    tomato sauce
  • 2 tbsp
    soy sauce
  • 2 tbsp
    sugar
  • 3 tbsp
    white vinegar
  • 8 tbsp
    water

For the Thickener

  • 1 tbsp
    cornstarch
  • 3 tbsp
    water

Instructions

  1. Cut the eggplants into your desired shapes. Soak the pieces in a bowl of water with 2 tbsp of vinegar for 5-10 minutes. This helps to retain the colour of eggplant
  2. In a bowl, mix together the tomato sauce, soy sauce, sugar, vinegar, and 8 tbsp of water until well combined.
  3. In a small bowl, dissolve 1 tbsp cornstarch in 3 tbsp water. Set aside.
  4. 4.Drain the eggplant pieces from the vinegar water solution. Steam them for about 5 minutes until they are tender but still retain their bright purple color. Avoid overcooking.

Cook the Dish

  1. Heat a pan over medium heat and add 1 tsp of oil.
  2. Stir-fry the minced garlic for 1 minute until fragrant.
  3. Pour in the prepared sauce and bring it to a boil.
  4. Add the steamed eggplant to the pan
  5. Stir well to coat the eggplant with the sauce
  6. Stir in the cornstarch mixture to thicken the sauce.
  7. Cook for an additional 1-2 minutes until the sauce has thickened
  8. Serve hot
