Vegan Ramen

Broth

  • 2- inch
    strip kombu
  • 2 pcs
    dried shiitake mushrooms soaked overnight
  • 2 cups
    water
  • 3 inch
    leek
  • 1 pc
    red apple peeled & grated
  • 1 tbsp
    miso paste
  • ½ tbsp
    tahini
  • 1 tsp
    sesame oil
  • ½ tsp
    chili oil made by infusing dried chilli + olive oil
  • 1 pc
    clove garlic
  • 1 pc
    fresh ginger
  • 1 tbsp
    soy sauce
  • salt to taste
  • ½ tbsp
    mirin

Noodles + Condiments

  • 1 handful
    shimeji mushroom
  • 1 pc
    baby pink radish thinly sliced
  • 1 pc
    dried chilli thinly sliced into threads
  • baby spinach/microgreens
  • black & white sesame seeds
  • nori sheet
  • fresh corn
  • zucchini spiralized

Instructions

Broth

  1. Soak kombu and mushrooms overnight in water.
  2. Blend with leek and apple. Strain.
  3. Add remaining ingredients and blend.

Vegan Ramen

  1. Add zucchini noodles into a bowl.
  2. Pour broth over.
  3. Add Condiments.
