Yong Dau Foo (Chinese stuffed vegetables)

Ingredients
Stuffing

1 tbsfinely cubed turnip

1/2 cupmashed tofu

1/2 cupparboiled millet

1 tbsfinely cubed carrot

1 tbsfinely diced chinese mushroom

1 tspdiced red chili
-
1 tspcut chives
-
1 tsptoasted sesame seeds

1 tspminced ginger
-
1 tspminced garlic
-
salt to taste

black pepper to taste
Vegetables and others

red chili deseeded and sliced open

green chili deseeded and sliced open lengthwise

firm tofu halved
-
long bean parboiled and then tied in a knot

lotus root sliced in rounds

carrot sliced in rounds

chinese mushroom rinsed, presoaked
Instructions

Combine all “Stuffing” in a mixing bowl.

Compact the stuffing into the vegetables/tofu/mushroom.

Lightly steam for 10mins and serve with desired dipping sauce.
Notes
The cooked millet is ideal as a binder due to its natural starch after parboiling. Retain the parboiled millet water and combine some water used to soak the chinese mushroom to make a light glaze.
