Jollof Rice

Ingredients

  • 2 cups
    Brown  rice
  • 1/4 cup
    Olive oil
  • 1
    Onions finely chopped
  • 2
    Red bell pepper blend
  • 1
    Habanero pepper blend
  • 3 cloves
    Garlic blend
  • 1 tsp
    Ginger paste
  • 1 tsp
    Turmeric paste
  • 5 big
    Tomatoes
  • 1 tsp
    Paprika
  • 1 tsp
    Thyme
  • 1 tsp
    Curry powder
  • 2 cups
    Vegetable broth
  • Salt  adjust to taste
  • 1 cup
    Mixed vegetables (e.g., peas, carrots)

Instructions

  1. In a large pot, Pour the olive oil and sauté the chopped onions, garlic, and ginger until fragrant. Cook on medium heat.

  2.  Add the turmeric paste and continue to sauté for a few minutes.

  3. Stir in the blended tomatoes, paprika, thyme, curry powder, habanero pepper, and salt. Cook for about 10 minutes, allowing the flavours to meld and the sauce to thicken.

  4. Rinse the rice in cold water until the water runs clear. Drain.

  5. Add the rice to the skillet with the tomato mixture and stir to coat the rice evenly with the sauce.

  6.  Pour in the vegetable broth.

  7. Cover the pot and simmer on low heat for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

  8. In the last 5 minutes of cooking, add the mixed vegetables and stir them into the rice.

  9. Taste and adjust seasoning if needed. Serve your delicious Jollof rice hot and enjoy!

Notes

Exercise caution with the habanero pepper; adjust quantity to your spice preference for a balanced heat level. Monitor the rice closely during the last simmering stage to prevent overcooking and maintain an ideal texture.
