Instructions

In a large pot, Pour the olive oil and sauté the chopped onions, garlic, and ginger until fragrant. Cook on medium heat.

Add the turmeric paste and continue to sauté for a few minutes.

Stir in the blended tomatoes, paprika, thyme, curry powder, habanero pepper, and salt. Cook for about 10 minutes, allowing the flavours to meld and the sauce to thicken.

Rinse the rice in cold water until the water runs clear. Drain.

Add the rice to the skillet with the tomato mixture and stir to coat the rice evenly with the sauce.

Pour in the vegetable broth.

Cover the pot and simmer on low heat for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
