Sweet Potatoes Pottage

Ingredients

  • 4
    medium-sized sweet potatoes
  • 20 grams
    Vchunks
  • 1 medium
    onions chopped
  • 1
    Red-bell pepper blended
  • 2 medium
    carrot chopped
  • 5 medium
    tomatoes blended
  • 30 grams
    green beans cut
  • 1 tsp
    curry
  • 1/2 tsp
    turmeric powder
  • salt to taste
  • pepper to taste
  • 2 cups
    vegetable broth/ water
  • 2 tbsp
    olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Pour in the chopped onion and stir it till translucent.

  2. Stir in the Vchunks, blended ingredients, curry and turmeric. Cook for 5 minute

  3. Add the diced sweet potatoes, Sauté for a few minutes, stirring occasionally.

  4. Pour in vegetable broth or water. Season with salt and pepper to taste. Bring the mixture to a boil.

  5. Once boiling, reduce the heat to a simmer. Cover the pot and let it cook for about 15-20 minutes, or until the sweet potatoes are tender. Add in the carrot and green beans and simmer it for 2 minutes.

  6. Taste and adjust the seasoning if needed.

  7. Serve the sweet potato pottage hot.
