vEGGy Sauce (Tofu scramble)

2-3 tbspsVegetable oil

1Onion chopped

2-3Tomatoes chopped

1Bell pepper chopped

2-3Cloves garlic minced

Instructions

Mash the tofu with a potato masher

Heat the vegetable oil over medium heat in a skillet or pan.

Add the chopped onions and sauté until they become translucent.

Add the minced garlic and ginger, and sauté for another minute until fragrant.

Stir in the chopped tomatoes, spinach and bell pepper. Cook for a few minutes until the tomatoes soften and release their juices.

Add paprika or chili powder,and curry powder. Mix well to combine the spices.

Pour in a small amount of water to create a sauce base. Let the mixture simmer for a few minutes until the flavors meld, and the sauce thickens slightly.

Gently add the mashed tofu, ensuring they are coated with the sauce.

Cover the skillet or pan and let the tofu simmer in the sauce for an additional 5-7 minutes, allowing them to absorb the flavors.

Season the sauce with salt and pepper to taste.
