Creamy Mushroom Soup

Ingredients

  • 1 cup
    dried shiitake mushroom soaked
  • 1 cup
    cashew nuts soaked overnight, rinsed and drained
  • 1 cup
    filtered water
  • 1 tbsp
    olive oill rib celery roughly chopped
  • 1/4 pcs
    shallot
  • 1 clove
    garlic
  • 1 tbsp
    nutritional yeast
  • 1 tsp
    miso paste
  • 1/2 tsp
    dried thyme
  • 1/2 tsp
    dried rosemary
  • organic salt salt to taste
  • 1 tsp
    cayenne pepper powder
  • 2 tbsp
    soy sauce
  • 2-3 stalks
    parsley for garnish

Instructions

  1. Slice mushrooms, place in a shallow glass bowl and pour in 1-2 tablespoons of organic soy sauce. Mix thoroughly and marinate for 15 minutes. Set aside a cup of sliced mushrooms.
  2. Once mushrooms are ready, add all ingredients (except for 1⁄4 cup mushrooms) into a blender and process until smooth.
  3. Top with sliced mushrooms and sprinkle cayenne pepper powder.
  4. Garnish with parsley and serve.
