Zucchini Hummus

This Zucchini Hummus is a light and refreshing twist on the classic dip, featuring creamy tahini, zesty lemon juice, and the subtle sweetness of coconut nectar. Ingredients

  • 1 pc
    zucchini peeled and roughly chopped
  • 1/4 cup
    tahini
  • 1.5 tbsp
    lemon juice
  • 1/2 tsp
    coconut nectar
  • 1/2 tsp
    pink Himalayan salt
  • 1/2 tsp
    cumin seeds
  • assorted cherry tomatoes halved
  • coriander leaves

Instructions

  1. Grind cumin seeds in the mill attachment of your food processor. Or you can use a pestle and mortar to do so too.
  2. Add zucchini, tahini, lemon juice, coconut nectar, salt, and ground cumin into food processor and process still smooth. Pour into bowl.
  3. Cut cherry tomatoes into halves. Top hummus with tomatoes and coriander leaves.
