Jujube Cookies
Jujube, or Chinese red dates, are naturally sweet and considered a medicinal herb that calms the mind and relieves mental tension. Rarely seen in the shape of cookies, here's an adaptation!

15 pcsred jujubes

⅓ cuptoasted walnut chopped

⅓ cupdried longan

⅔ cupflour

2 pcsflax egg 2 tbsp ground flaxseed + 6 tbsp water

⅓ cupvegetable oil

¼ cupred sugar optional

½ tspsalt

1 tspbaking powder

red goji berries optional for topping
Instructions

Steam red jujube and dried longan for 15 minutes.

Blend the steamed red jujube in a food processor until a paste forms.

Preheat oven to 160c.

Mixed the dry ingredients – flour, salt, baking powder, red sugar (optional) – in a bowl.

Add in the wet ingredients – oil, flax eggs, jujube paste – into the dry mixture and mix well.

Fold in the walnut and longan. Scoop and roll the dough into ~16 balls and gently press down.

Add some goji berries on top as topping. Bake for 20-25 minutes, let cool and enjoy.
