-
2 cupGroundnuts (peanuts)
-
1 cupDate (adjust to taste)
-
1/2 tspGround ginger
-
1/2 tspGround cloves

1/2 tspGround cinnamon

Water
Instructions
-
Rinse the millet thoroughly in cold water to remove any impurities. Drain well.
-
Roast the millet over medium heat in a dry skillet until it turns golden brown and gives off a nutty aroma. Stir frequently to prevent burning. This should take about 5-7 minutes. Remove from heat and let it cool.
-
Grind it into a fine powder using a blender or a mill once the roasted millet has cooled.
-
Roast the groundnuts in the same skillet, until they become fragrant and release their oils. Be sure to stir constantly to prevent them from burning. This should take about 5 minutes. Remove from heat and let them cool.
-
Grind the roasted groundnuts with date into a smooth paste. You can add a little water to facilitate the blending process if needed.
-
Add the millet powder and groundnut paste in a large pot. Gradually add water while stirring to create a smooth, lump-free mixture.
-
Place the pot over medium heat and continue stirring as the mixture thickens. Add more water to achieve your desired consistency, like a thin porridge. It should take about 15-20 minutes to cook.
-
Add the ground spices (ginger, cloves, and cinnamon) once the mixture is cooked.
-
Continue to cook for an additional 5-7 minutes, stirring frequently.
-
Remove the pot from heat and let the Kunnu Gyada cool to room temperature.
-
Strain the mixture through a fine sieve or cheesecloth to remove any remaining solids.
-
Serve the Kunnu Gyada chilled or at room temperature. You can garnish it with additional ground spices if desired.
-
Enjoy your homemade Nigerian Kunnu Gyada!
Notes
Ensure the roasted millet and groundnuts cool completely before grinding. Adjust the sweetness by varying the dates according to your taste preference.
