Ofe Nsala

1/2 tspGround pepper (chili or scotch bonnet)

1 tspUziza (Piper guineense) seeds Optional, for flavor

Instructions

Boil the enoki mushroom in a large pot with enough water. Add the onion, ground pepper and salt to season it. Cook for 5 minutes

Peel and slice the yam into thin rounds While the mushroom is cooking.

Add these yam slices to the pot to help thicken the soup. Cook until the yam is soft and disintegrates into the soup.

Add the ground mushroom, locust beans and uziza seeds. Stir and let it simmer for a few minutes, then add the Jackfruit.

Season with more salt if needed. Let the soup simmer for 10-15 minutes to let the flavors meld together.

Add the utazi leaves for garnish and additional flavor. You can also add more uziza seeds if you want a stronger flavor.

Taste and adjust the seasoning as necessary. Serve your Ofe Nsala hot with fufu, pounded yam, or your preferred side dish.
