Vegan carrot salmon
Vegan carrot salmon is a feast for the eyes as well as the palate. Its marine flavour intensifies the longer the carrot strips are marinated. Vegan carrot salmon makes for a great appetizer or you can use it to spice up your sushi!

Marinade

4carrots large

2 tbspvinegar (rice or apple cider)

1 sheetnori

1 tbspsalt

1 tbspliquid smoke

300 mlwater cold
Coating

3 tbspolive oil

2 dropsliquid smoke

salt to taste
Instructions

Use a potato peeler to cut the carrots into long strips, then place them in boiling water or steam for 5 minutes.

Put the vinegar, nori, salt, and 1 tsp of liquid smoke in a large, sealable container.

Add the lukewarm carrot strips and leave to stand in the fridge overnight (or ideally, 2–3 days).

Mix the oil with a bit of salt and two more drops of liquid smoke, then coat the carrot salmon with the mixture and serve.
