Kenyan Sponge Cake (Mkate wa Mayai)

Ingredients

  • Egg alternative
  • ½ cup
    powdered sugar
  • tbsp
    all-purpose flour
  • ½ tsp
    cardamom
  • ½ tsp
    baking powder

Instructions

  1. Preheat the oven to 355°F.

  2. Grease and line a 9in cake tin.

  3. Sift the flour and baking powder.

  4. Add the egg alternative, sugar and cardamom and beat until fluffy (until the volume doubles).

  5. Add the flour gradually and fold in carefully.
  6. Spoon the mixture into the tin.
  7. Bake for around 20 minutes until a toothpick inserted in the middle comes out clean.
  8. Leave to cool.
