Spicy Pumpkin Soup

2 tbspoil

1spicy pepper cut in rings

1 largeonion shredded

1red bell pepper diced

1 smallbottle squash diced (if you can't find bottle squash you can use zucchini or pumpkin)

1 can(s)peeled tomatoes

1bay leaf

3 cupswater

2 cubesveggie bouillon

1 tbsppaprika powder
Instructions

Heat up the oil in a large pan and stir-fry the spicy pepper, red bell pepper, onion and squash for a couple minutes

Add the tomatoes, bay leaf, and veggie bouillon. Add water and let the boil for about 15 minutes until the veggies are soft.

remove the bay leaf and add the paprika powder.

Blend the final mix either in a blender or in the pan using a handheld blender.

Done! (optional) garnish with fresh parsley.

Tip:Â Works great as a side for some bread with hummus.
