People tend to associate oatmeal with winter as you can eat it warm, with wintery spices like cinnamon and allspice. As well, oats traditionally grow in the green fields of the northern hemisphere. Tropical porridge is a great way to start your day. Oatmeal is nutritious, and can help combat cholesterol and other health problems. You can prepare your oats for the morning by letting them soak in water or plant-based milk overnight. By breakfast time, your porridge will be ready for you to eat – topped with nutritious goji berries and nectarines.

Ingredients

1/3 cuprolled oats

1 handfulgoji berries

1nectarine
-
2 tbspsunflower seeds

1/4 cupcoconut grated

1/2 cupwater or plant-based milk
Instructions

Pour the porridge and water/milk into a small pan, add the goji berries.

Bring to a boil over medium heat and lower the heat as it begins to simmer. Keep stirring and add some water if it gets too dry. Let simmer for about five minutes.

In the meantime, cut the nectarine into small pieces – you don’t have to peel it.

Stir the nectarine through the porridge when it is ready and sprinkle with the sunflower seeds and grated coconut.
