Ingredients

  • 250 ml
    water
  • 2 pcs
    medium tomatoes 200g, cubed
  • 30 g
    black-eyed peas
  • 30 g
    purple sweet potatoes cubed
  • 30 g
    cauliflower chopped
  • 30 g
    pineapple chopped
  • 2 pcs
    star anise
  • 4 pcs
    bay leaves
  • 1 pc
    small dry red chili
  • 200 ml
    water
  • ½ tsp
    fine sea salt

Instructions

  1. Rinse and soak the black-eyed peas in water overnight. Drain and rinse them thoroughly.
  2. Peel and cube the purple sweet potatoes.
  3. Wash and chop the cauliflower into small pieces.
  4. Wash and cube the tomatoes.
  5. In a pot with 250ml of water, add the tomatoes, black-eyed peas, pineapple, star anise, and bay leaves. Cook for 15 minutes.
  6. Add the cauliflower and sweet potatoes to the pot. Continue cooking for another 15 minutes.
  7. Add the dry red chili and cook for an additional 3 minutes.
  8. Stir in the sea salt and cook for 2 more minutes before turning off the heat.
  9. Garnish with parsley or coriander leaves before serving.
