Tosai (Dosa)

Savory pancake made from lentils with origins from Indian cuisine. Complimented by dhal, curries and spicy or savory coconut chutnies.

Ingredients

Servings: 10
  • 1/2 cup
    urad dhal lentils
  • 1 cup
    uncooked rice raw grains of rice
  • 1/2 tsp
    fenugreek seeds optional
  • 1 tsp
    salt
  • 3 tbsp
    cooked rice

Instructions

  1. Soak all ingredients for a minimum of 3-4 hours and then blend them fine thick batter.
  2. Add salt to the batter after blending them and allow the batter to ferment for 8-12 hours.
  3. Once the time is up, the batter should have increased in volume. Take a ladle and mix it well. Your batter is ready.
  4. Heat a non-stick tava, take a ladle full of the tosai batter. Pour the batter and gently spread the batter starting from the centre and moving outwards.
  5. Cook till the base is nicely golden and crisp. The base will leave the pan when it gets cooked. Fold them into half then ready to serve.
  6. Eat with dhall curry (see recipe) and coconut chutney (see recipe)
