#1 Popular food in Malaysia. All-day breakfast favorite for all walks of life. Fragrant rice infused with coconut milk with veg, peanuts and other condiments to complete the meal.

Ingredients

Servings: 6
  • 2 tbsp
    vegetable oil
  • 4 cloves
    shallots
  • 5 slices
    ginger (young or old)
  • 4 cups
    rice any variety
  • 2 pc
    pandan leaves knotted
  • 500 g
    coconut cream diluted into 6 cups OR 1L boxed coconut milk diluted into 6 cups
  • 1 pc
    cinnamon stick
  • 2 pc
    star anise
  • 2 tsp
    salt
  • 150 g
    tempeh or firm tofu sliced
  • 1 pinch
    tumeric powder
  • 1 pinch
    black pepper

Instructions

  1. In a wok, add vegetable oil and saute shallot, ginger and lemongrass over medium heat until fragrant.
  2. Add rice and pandan leaves and saute for 1-2 minutes. Turn off the heat.
  3. Transfer everything into the rice cooker, add the rest of the ingredients. Cook the rice according to the rice cooker’s instruction.

Condiments:

  1. Slice tempeh thinly.
  2. Season lightly with tumeric powder, black pepper and salt to taste.

  3. Airfry 160-180C for 12-20 minutes

Serve:

  1. Serve rice bowl serving onto plate, accompany with air-fried tempeh, fried peanuts, sliced cucumbers (and other veg).
  2. Finally, topoff with spicy sambaI (see recipe) up to your preference.
