Vegan Hainanese “Chicken” Rice

Vegan “Chicken”

  • 400 g
    king oyster mushrooms medium size
  • ½ pc
    Japanese cucumber

Cooking Stock

  • 15 g
    old ginger slices
  • 15 g
    pandan leaves knotted
  • 2 pcs
    lemongrass lightly pounded
  • ¼ tsp
    sea salt
  • tsp
    mirin
  • 900 ml
    water

Instructions

  1. Separate the caps of the king oyster mushrooms from the stems.
  2. Lightly pound the stems with the back of a knife.
  3. Soak the mushrooms in water overnight and keep in refrigerator.
  4. The next day, remove the soaked mushrooms from the refrigerator and squeeze out any excess water. Reserve the soaking water for other purpose such as making soup or sauces.
  5. Cook soaked mushrooms together with cooking stock ingredients for about 15 minutes. Keep the cooking stock.
  6. Remove cooked mushrooms from the stock, let them cool and slice them into strips.
  7. Thinly sliced Japanese cucumber and arrange the slices on a serving plate.
  8. Place mushroom strips on top of the cucumber slices.
  9. Drizzle with soy sauce.
  10. Serve sliced mushrooms with rice, soy sauce, dipping sauce, cucumber, bean sprouts and coriander.
