Eggy-style mayo roll (ve)

A sandwich with lettuce, tomato slices, and a crumbly filling on a seeded bap sits on a white plate; a bowl of cherry tomatoes is in the background.

A creamy, flavour-packed eggy-style mayo filling made with tofu, served in a soft roll with crisp lettuce and juicy tomato. Perfect for a grab-and-go lunch. Portion sizes relate to a child of primary school age, please amend to suit your needs.

Ingredients

Servings: 10
  • 60 g
    plant-based mayonnaise
  • 22 g
    nutritional yeast
  • 6 g
    chopped fresh chives (optional)
  • 1.5 g
    kala namak (black salt)*
  • 0.57 g
    ground black pepper
  • 0.55 g
    turmeric powder
  • 0.77 g
    garlic powder
  • 500 g
    extra firm tofu
  • 10
    wholemeal bread rolls
  • 100 g
    iceberg lettuce
  • 400 g
    tomatoes sliced

Instructions

  1. In a mixing bowl, combine the plant-based mayonnaise, nutritional yeast, chopped fresh chives (if using), kala namak, ground black pepper, turmeric powder, and garlic powder. Mix everything together until well combined.

  2. Crumble the tofu into pieces with your hands or break into chunks using a fork. Add the tofu to the mayo mixture and gently fold them in until the tofu is evenly coated. Be careful not to mash the tofu too much; you want to maintain a chunky texture.

  3. Once the mixture is ready, you can use it immediately or refrigerate it for a couple of hours to let the flavours meld together.

  4. Serve in a wholemeal bread roll with salad.

Notes

*Kala namak, also called black salt, gives an “eggy” flavour. If you can’t source this, you can instead use 1/2 tsp salt which will still give a good flavour, but not quite as “eggy”.
