Recipe of the month: Crunchy Minty Green Pea Salad (VE)

Are you looking for a refreshing, healthy side-dish to replace your usual side salad? This recipe is so easy to make, packed full of nutrients and absolutely delicious! (As well as being 100% plant-based, of course.)

We know you might not usually add mint sauce to a salad, but trust us, it's a winner! This is one of our team's favourite recipes, and is really popular with our catering partners.

  • Cooking Time: 9 minutes

Ingredients

Servings: 10
  • 750 g
    Fine green beans
  • 300 g
    Peas
  • 85 g
    Spring onions finely sliced
  • 150 g
    Baby spinach roughly chopped
  • 75 g
    Mint sauce

Instructions

  1. Cook the green beans in plenty of boiling water until tender.

  2. Immediately drain and plunge the beans into iced water with the cold tap running until the beans are completely cold. Drain well.

  3. Combine all the ingredients to serve.
