Okpa

Ingredients

2 cupsBambara beans (okpa flour) Ground

1/2 tbspPalm oil

1 medium sizedOnions finely chopped

1/2 tspTurmeric powder for colour

2 tbspMushroom

2 tbspGround pepper adjust to taste

Salt adjust to taste

1 tspUtazi leaves Ground

2 cupsWarm water
Instructions

Preheat your oven to 350°F (175°C).

Put some water in the oven for steaming.

Combine the ground okpa flour in a mixing bowl

Add the palm oil to the mixture stirring gradually.( Make sure the palm oil is well incorporated into the mixture)

Add warm water to the mixture while stirring slowly until you achieve a smooth, thick batter.

Add the chopped onion, turmeric powder, ground pepper, salt, and ground utazi leaves (optional)

Grease a baking pan with a little palm oil to prevent sticking.

Pour the batter into the greased pan and smooth the top.

Cover the pan with aluminum foil or a lid to prevent steam from escaping.

Place the pan in the preheated oven and bake for about 45mins to 1hr, or until the okpa is set and firm.

Once done, remove the okpa from the oven and allow it to cool slightly before cutting it into slices or squares.
