Chunky veggie-power biriyani (ve)

A veg-packed biriyani with blended beans for extra goodness. Portion sizes relate to a child of primary school age, please amend to suit your needs.

Ingredients

Servings: 10

For the roasted veg

  • 375 g
    leek sliced 1.5cm thick
  • 340 g
    carrot thinly sliced
  • 500 g
    brocolli small florets
  • 20 g
    mild curry powder
  • 45 g
    oil

For the white bean sauce

  • 500 g
    butter beans drained and rinsed
  • 515 ml
    veg stock

For the biriyani

  • 60 g
    oil
  • 700 g
    onion chopped
  • 250 ml
    water
  • 25 g
    mild curry powder
  • 2 g
    coarse ground black pepper
  • 20 g
    garlic granules
  • 800 g
    brown long grain rice cooked
  • 500 ml
    veg stock

Instructions

  1. Mix the roasted veg ingredients and coat evenly in the oil and curry powder.

  2. Spread in a single even layer in a roasting tray and roast at 220°C for 25 minutes. Set aside once cooked.

  3. To make the white bean sauce blend the butter beans and stock in a high-powered food processor until smooth.

  4. While the vegetables are roasting, heat the oil and cook the onion until softened.

  5. Add the water and the spices. Cook, stirring for 2 minutes.

  6. Add the white bean sauce, cooked rice, roasted vegetables and veg stock.

  7. Stir to combine and continue to cook until hot.
