450 gBroccoli florets

300 gLeek Cut into 1.5cm slices

300 gCarrot Cut into 1.5cm slices

250 gRed onion Sliced

1.5 tspDried oregano

1.5 tbsoOil
Instructions

Combine all the ingredients and spread in a single layer on a baking sheet.

Roast in a 220°C oven for 30 minutes – or until browned and cooked through.

Mix the veg, turning after 15 minutes of cooking.
