Ingredients

Servings: 10

For curry sauce

  • 12.6 g
    oil
  • 280 g
    onions chopped
  • 120 g
    carrot peeled and grated
  • 3.1 g
    garlic powder/granules
  • 3.8 g
    curry powder
  • 2.2 g
    turmeric powder
  • 250 g
    dried red split lentils rinsed
  • 400 ml
    light coconut milk
  • 750 ml
    vegetable stock
  • 30 g
    lime juice
  • 2.5 g
    salt

To serve

  • 10
Quorn steaks (or similar) or 1.2kg sweet potatoes cut in to slices
  • 80 g
    cornflour
  • 50 g
    panko breadcrumbs
  • 80 ml
    cold water

Instructions

For curry sauce

  1. Heat the oil in a pan and cook the onions and carrot for about 10 minutes until the carrot is starting to soften.

  2. Add the garlic and ginger and fry for another minute or so, then stir in the curry powder and turmeric.

  3. Add the red lentils, coconut milk, and 750ml vegetable stock.

  4. Simmer over a low heat for 20 minutes, topping up with more water if it gets too thick. Then, blitz with a stick blender to create a smooth sauce. Season with salt and the lime juice.

For the Quorn or sweet potato

  1. Preheat the oven to 180°C.

  2. Mix the water with the cornflour to create a paste and coat the Quorn fillets or sweet potato slices. For speed, do this by laying all the sweet potato or Quorn fillets on a lined baking sheet and lightly brushing one side with cornflour paste. Then, roughly sprinkle over the breadcrumbs.

  3. Cook the sweet potato in the oven for 30 minutes until golden brown. If using the Quorn, cook for 15 minutes until golden brown.

  4. Serve with rice and the curry sauce.
