Sausage and Red Pepper Pizza (ve)

Ingredients

Servings: 10

Pizza dough

  • 300 g
    strong white bread flour plus a little extra for rolling out the dough
  • 200 g
    wholewheat spelt flour
  • 0.5 tsp
    salt
  • 7 g
    instant dried yeast
  • 300 ml
    warm water
  • 1 tbsp
    oil

Pizza sauce

  • 1 tbsp
    oil
  • 1
    small onion diced
  • 1
    small red bell pepper sliced
  • 1 tbsp
    tomato puree
  • 1 tsp
    sweet, smoked paprika
  • 1 tsp
    garlic granules
  • 200 g
    chopped tomatoes
  • 50 ml
    water

Pizza toppings

  • 10
    plant-based sausages sliced into 1cm pieces
  • 200 g
    sweetcorn drained and rinsed
  • 100 g
    plant-based cheese grated

Instructions

  1. Preheat the oven to 200°C.

  2. Mix the flours, yeast and salt together in a large bowl. Pour in the water and oil and mix to make a smooth dough.

  3. Put the dough back in the bowl and place a clean tea towel over the top. Leave to rest for 20 minutes.

  4. In the meantime, make the sauce. Heat the oil in a pan and fry the onion and pepper until soft.

  5. Add the tomato puree, sweet smoked paprika and garlic granules and fry for one minute. Pour in the chopped tomatoes and water and bring the sauce to the boil. Allow the sauce to simmer for 15 minutes.

  6. Roll the dough out into a large rectangle on a floured surface and place on a lightly-oiled baking tin (37 x 27cm).

  7. Top the pizza base with the sauce, sliced plant-based sausages and sweetcorn.

  8. Sprinkle on the cheese.

  9. Bake for 25 minutes or until the dough has risen and the cheese is melted.
