Cool Spanish-style gazpacho (ve)

Ingredients

Servings: 10
  • 400 g
    Tomatoes
  • 40 g
    Spring onion finely chopped
  • 80 g
    Cucumber peeled
  • 1
    Red pepper
  • 0.5 tsp
    Garlic granules
  • 2 tsp
    White wine vinegar
  • 0.25 tsp
    Salt
  • 1 tsp
    Dried basil
  • 320 ml
    Veg stock cooled

Instructions

  1. Combine all the ingredients in a high powered food processor and blitz until smooth.

  2. Serve chilled.
