450 grice noodles dry weight

2 tbspcooking oil

160 gred onion

2 clovesgarlic chopped

16 gfresh ginger chopped

200 gchestnut mushrooms sliced

1 litrewater

2 tbspdark soy sauce

2 tsprice vinegar
-
1 tspChinese 5 spice

50 gsunflower seeds
-
300 gblack beans tinned
-
2 tspagave syrup
-
200 gfrozen edamame beans
-
300 gfrozen mixed vegetables
Instructions

Cook your noodles according to the packet instructions and then rinse with cold water and set to one side.

Heat the oil in a saucepan over a medium heat. Once hot, add the red onion and cook for 5 minutes. Add the garlic, ginger and mushrooms. Cook for another 5 minutes until the mushrooms turn brown.

Add the water, soy sauce, vinegar, Chinese 5 spice, sunflower seeds, black beans and agave syrup. Put the lid on and simmer for 10-15 minutes, until you have a rich broth that is a deep brown colour.

Add your vegetables and frozen edamame beans and cook for another couple of minutes.

Place a portion of noodles into a bowl and ladle the vegetables, beans and broth over the top and serve.
