Smoky Sausage and Mushroom Goulash (ve)

Ingredients

Servings: 10

White bean sauce

  • 485 g
    butter beans (tinned) drained and rinsed
  • 515 ml
    veg stock

Goulash

  • 60 g
    oil
  • 650 g
    onions thinly sliced
  • 500 g
    mushrooms sliced
  • 15 g
    sweet smoked paprika
  • 400 ml
    vegetable stock
  • 850 g
    white bean sauce
  • 400 g
    plant-based sausages cooked and chopped
  • 6 g
    cornflour

Instructions

White bean sauce

  1. Blend butter beans and veg stock in a high-powered food processor until smooth.

Goulash

  1. Heat oil and add onions.

  2. Cook on low heat for 15 minutes until soft and lightly brown.

  3. Add mushrooms and cook for a further 3-5 minutes until tender.

  4. Add smoked paprika and stock. Stir well to combine.

  5. Add white bean sauce and sausages and bring to a simmer.

  6. Mix the cornflour with an equal volume of cold water and add to the sauce.

  7. Return to a simmer and cook for 3minutes, or until the sauce thickens.
