Banana ketchup curry (ve)

This hearty banana ketchup curry is a delicious fusion of sweet and savoury, with tender chunks of sweet potato, cauliflower, and chickpeas in a rich, warming sauce. Comforting, satisfying, and full of bold flavour. Portion sizes relate to a child of primary school age, please amend to suit your needs.

Ingredients

  • 230 g
    sweet potato peeled and diced
  • 550 g
    potatoes peeled and diced
  • 280 g
    cauliflower florets
  • 32 ml
    oil
  • 200 g
    onions
  • 10 g
    garlic granules
  • 25 g
    mild curry powder
  • 800 g
    tinned tomatoes
  • 30 g
    tomato ketchup
  • 1.25 litre
    vegetable stock
  • 200 g
    ripe bananas mashed
  • 600 g
    tinned chickpeas drained and rinsed

Instructions

  1. Add the sweet potato, potatoes, and cauliflower to a large pot and cover with water. Bring to the boil and simmer for 5-10 minutes until the vegetables are nearly cooked through.

  2. In the meantime, heat the oil in a large pan and fry the onions for 5 minutes.

  3. Add the garlic granules, curry powder, tinned tomatoes, tomato ketchup, vegetable stock, mashed bananas and chickpeas and mix to combine.

  4. Drain the sweet potatoes, potatoes and cauliflower and add to the curry.

  5. Gently mix to combine, then simmer for 20 minutes until the sauce is has thickened.

  6. Serve with brown rice or preferred side dishes such as naan or chapati.
