Vanilla and date overnight oats

Overnight oats are the ideal breakfast for those who have little time in the morning and still want to start the day full of energy. This recipe uses vanilla and dates for a subtle sweetness, but it can be modified to your liking, and topped with your favourite fruits or nut butter. Ingredients

Servings: 1
  • 40 g
    oats
  • 120 ml
    milk (plant-based)
  • 1 tsp
    chia seeds or ground flax seeds
  • 1 pinch
    vanilla pulp scraped from vanilla pod, or vanilla extract
  • 1 tbsp
    dates cut into small pieces; alternatively, use raisins
  • fresh fruit as desired

Instructions

  1. Mix the oatmeal with the plant-based milk and stir in the chia seeds.

  2. Now stir in the vanilla pulp and the dates.

  3. Wash the fruit, cut into small pieces, and add as a topping. Alternatively, add the fruit just before serving in order to preserve as many nutrients as possible.

  4. Place everything in a screw-top jar in the refrigerator overnight and enjoy a delicious, healthy breakfast the next day!

Notes

For a more delicate taste, you can add a pinch of Ceylon cinnamon, a teaspoon of nut butter, or cocoa nibs.
