Sweet potato soup for supper
Sweet potatoes are a great ingredient when you want to make a satisfying and hearty soup. The lime, chilli and carrot add a spicy and fresh flavour. Sweet potatoes are full of vitamins and minerals such as vitamin B6 and magnesium. Cooking helps release their nutritional benefits.
This soup is especially great sprinkled with a few fresh coriander leaves.

1carrot

800 gsweet potato

½lime

3 cloves ofgarlic

1chilli pepper

750 mlvegetable stock

2 tspgaram masala

1 tbspolive oil
Instructions

Peel the sweet potatoes and cut them up into pieces of approximately 1.5 cm.

Mash the garlic and chop the onion finely. Fry in olive oil for five minutes.

Cut the carrot and chilli pepper into small pieces and fry lightly. Add the garam masala and keep frying on a low heat until the herbs start to release their aroma. Then add the sweet potato cubes to the pan, together with the vegetable stock. Set the heat on high until it boils.

Stir well and cook on a low heat for 20 minutes (or until the potatoes are cooked). Then add the lime juice and purée the soup with an immersion blender.
