Vegan seitan sausage

Vegan sausage can be prepared easily and made out of seitan with just a few ingredients. Instead of one big sausage you may also make several smaller ones. Whether you use it as cold cuts, for hotdogs, in a soup or for a barbecue: Just try this multi-talented seitan sausage for yourself!

Ingredients

  • 165 g
    chickpeas from a glas or can, may also use other legumes
  • 240 ml
    vegetable broth
  • 2 tbsp
    soy sauce
  • 2 tsp
    garlic pressed
  • 1/4 cup
    nutritional yeast flakes
  • 1 1/2 tsp
    ground fennel seeds as desired
  • 1 tsp
    chili powder
  • 1 tsp
    paprika powder
  • 1 tsp
    oregano
  • 1/2 tsp
    black pepper
  • 160 g
    wheat gluten

Instructions

  1. Add all the ingredients but the wheat gluten to a bowl and puree until the mixture is homogenous.
  2. Now add the gluten and stir with a fork until all the gluten is mixed into the mixture. Knead the dough with your hands so that strings are emerging. The dough should be rather wet.
  3. Shape the seitan mixture like a sausage and wrap them in a baking paper or aluminum foil. Screw in the ends and place them under the sausage.
  4. There are two options in preparing the sausage: either by steaming or baking.
  5. If prepared with a steamer: Steam the sausage until it’s firm. This will take around 40 minutes.
  6. If prepared with an oven: Preheat the oven to 170 degrees celsius for top and bottom heat. Bake the sausage for around 50 minutes. If you place a bowl with hot water in the oven, this will prevent the sausage from getting too dry.
  7. To test wether the sausage is done, unwrap it and cut in half. The sausage should be firm and not pull strings.

Notes

The herbs and spices in this recipe give the sausage a mild flavor and can be modified as desired. For example, if you like smoked sausage, you may use smoked pepper powder. Instead of one big sausage, you could also make six small sausages. For that, you can cut six pieces of baking sheet or aluminum foil with dimensions of 20 x 15 cm. Divide the mixture into six portions and form into rolls. Prepare like a big sausage.
