Eggless Banana Brownies

We’re going bananas for plant-based baking! Mashed bananas aren’t just tasty, they’re also a brilliant egg substitute.

Today, we’re whipping up a fudgy, gluten-free brownie recipe that’s 100% plant-based… no eggs needed, just banana magic.

  • Cooking Time: 30 minutes
  • Total Time: 40 minutes

Ingredients

Servings: 16

Dry ingredients

  • 100 g
    oat flour
  • 43 g
    natural cocoa powder
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • ½ tsp
    sea salt

Wet ingredients

  • 237 ml
    mashed bananas about 2 large bananas
  • 59 ml
    maple syrup
  • 40 g
    brown sugar
  • 1 tbsp
    brewed coffee or non-dairy milk
  • 2 tsp
    vanilla extract
  • 79 ml
    runny nut butter unsalted

Extra

  • 60 g
    hazelnuts chopped

Instructions

  1. Preheat oven to 180°C (350°F), line an 8×8 pan.

  2. Mix dry ingredients in a large bowl.

  3. In a separate bowl mash your bananas, add wet ingredients and mix.

  4. Mix in your wet into your dry ingredients and fold in the hazelnuts.

  5. Bake 28-31 mins. Cool for 20 minutes before slicing!
