Meet the Incubator startups: KaYama Foods

KaYama Foods has developed a novel plant-based fat that offers food manufacturers a fully functional, healthy, and cost-effective solution, without compromising on taste or texture. It’s cholesterol-free, free of E-label ingredients, and contains up to 90% less saturated fat than animal fat.

KaYama Foods: We use a physical structuring technology to give healthy unsaturated liquid oils a solid structure at room temperature. The physical properties of our fat are tailored to mimic those of traditional saturated fats (for example, beef tallow or butterfat), and since there are no chemical modifications involved, the nutritional profile of the oil remains unchanged. This enables food manufacturers to easily formulate juicy, rich, mouth-watering products, with a fraction of the saturated fat that would normally be needed to achieve that.

KF: Our fat, which is designed for industry, has many advantages: it behaves just like traditional animal fats; does not need major formulation or processing changes; is naturally resistant to oxidation, and thus has a longer shelf life; and doesn’t require refrigeration during shipping, storage, and handling.

KF: We hope to show the food industry that ‘tasty’ and ‘healthy’ can be friends. They can come together in the creation of amazing products that appeal to consumers’ taste buds and preferences.
