Greek salad with tofu feta

For the Tofu-Feta

  • 325 g
    tofu
  • 4 tbsp
    olive oil
  • 1
    lemon juice
  • 4
    garlic cloves
  • 2 tsp
    oregano
  • 3 tsp
    salt

For the Greek salad

  • 1
    bell pepper diced
  • 4
    tomatoes diced
  • 1
    cucumber diced
  • 1
    red onion in thin half rings
  • 15 g
    basil finely chopped, optional
  • 100 g
    olives of your choice halved
  • 1
    baby romaine lettuce (or 1/2 head romaine lettuce) in thin strips

For the dressing

  • 2 tbsp
    olive oil
  • 2 tbsp
    lemon juice
  • 2 tsp
    oregano

Instructions

Tofu feta

  1. It is best to let the tofu drain for half an hour. To do this you wrap the block in a tea towel, place this between two chopping boards and put a thick book on top. Let it lie like this for half an hour. Then cut into cubes.

  2. In a bowl you mix olive oil, lemon juice, garlic, oregano and salt

  3. Put the tofu cubes in the marinade and let them marinate for at least an hour, stirring them halfway through.

Dressing

  1. For the dressing, mix olive oil, lemon juice and oregano.

Salad

  1. Put all the ingredients for the salad in a spacious bowl and drizzle with the dressing.

  2. Then add the tofu-feta and you have a delicious plant-based Greek salad

Notes

Tip: to make it a filling meal you can eat it with some baguette or pitta breads!Â
