Metkut (Traditional legume spice mix)

Metkut is a legendary dry spice mix from Maharashtra. It’s a clever blend of roasted legumes and spices that adds a massive protein and flavor boost to simple rice. In South India, a similar mix is called Podi—it’s the ultimate kitchen staple for quick, tasty meals!

Ingredients

  • 2 cups
    channa dal (Bengal gram)
  • ¼ cup
    urad dal (black gram)
  • ¼ cup
    moong dal
  • ½ cup
    rice
  • ¼ cup
    wheat or wheat flour
  • 1 tbsp
    sunflower oil
  • 2 tbsp
    chili powder
  • 1 tsp
    turmeric
  • 1 tsp
    black peppercorns
  • ½ tbsp
    fenugreek seeds
  • ½ tbsp
    cumin seeds
  • 1 tbsp
    coriander seeds
  • 1 tbsp
    mustard seeds
  • ½ tsp
    asafoetida
  • Salt to taste

Instructions

  1. In a dry pan, roast the ingredients one by one to ensure the best flavor. Start with the rice until it’s crisp, followed by the urad, channa, and moong dal. Roast the wheat flour last. Set everything aside to cool.
  2. Heat a dash of oil in a pan. Sauté the fenugreek seeds, cumin, mustard seeds, and peppercorns with a pinch of salt until fragrant.
  3. Once everything has cooled, place it in a food processor or high-speed grinder.
  4. Add the chili powder, turmeric, and asafoetida. Grind the mixture a little at a time until it becomes a very fine, aromatic powder.
  5. This protein-packed powder tastes incredible stirred into hot, sticky rice with a little bit of oil or vegan butter.
