1-Pan Brown Rice with Spinach and Mushrooms

1onions quartered

2 tbspoil

200 gmushrooms (seasonal mix) roughly chopped

1/2 tbspfresh thyme

1 tbspfresh oregano

250 gpre-cooked brown rice bought or self-made

125 gvegan cream cheese

200 gspinach

25 galmonds roughly chopped

salt and pepper to taste
Instructions

Heat up some oil in a deep pan and brown the onions for about 2-3 minutes

Add the mushrooms, thyme and half the oregano. Stir the mixture well and add salt and pepper to taste.

Add the pre-cooked rice along with the vegan cream cheese and mix everything into a creamy looking rice. While mixing, add spinach periodically and let it shrink as your stir.

Done! Serve the meal in wide bowls and garnish it with the rest of the oregano and almonds.
Notes
Tip: Instead of seasonal mix mushrooms you can also use 100g shiitake and 100g chestnut mushrooms. If you do so, just chop the mushrooms in half.
