Summer salad with strawberries and balsamic dressing

Strawberries and balsamic are a surprisingly delicious combination. Together with spinach, avocado and nuts they make a light, summery salad. Perfect for a summer picnic, or as a side dish for the barbecue!

Ingredients

Servings: 2
  • 250 g
    strawberries halved
  • 1
    avocado diced
  • 100 g
    baby spinach washed
  • 10 g
    pecans roughly cut
  • 1
    small red onion or spring onion in thin slices

For the balsamic dressing

  • 1 tbsp
    balsamic vinegar
  • 1 tbsp
    extra virgin olive oil
  • 1/2 tbsp
    agave syrup

Instructions

  1. For a fuller flavor you can roast the pecans briefly in a dry frying pan.

  2. Put all the ingredients for the balsamic dressing in a dish and mix until smooth. Season with pepper and salt.

  3. Combine all the ingredients in a large salad dish, pour the dressing over them and toss just before serving.

Notes

Tip: To make this meal complete, add a source of wholegrains (such as quinoa or wholemeal croutons) and another healthy protein source, think pulses, (smoked) tofu, soy pieces or a healthy meat substitute.
