Dairy Production Without Animals? The Future Belongs to Precision Fermentation
Those Vegan Cowboys is performing research on the production of milk proteins, especially caseins, without the use of animals. The core technology to do so is called precision fermentation. This technique aims to program micro-organisms such as bacteria, yeast and filamentous fungi, via genetic engineering into producing casein proteins which are functionally bio-identical to the caseins from cow milk. The general purpose of this research is to allow animal-free production of real cheese and other dairy products without compromising on taste, texture, nutritional value and functionality (e.g. melt and stretch). This is motivated by the desire to reduce the environmental and climatological impact, the massive land and water use and the animal suffering, currently associated with the traditional dairy industry.
