Banh Mi sandwich

This delicious, fresh sandwich is popular in Vietnam and combines the flavors of Vietnamese and French cuisine. A French baguette, topped with (French) plant-based pâté and Vietnamese tofu, herbs and vegetables, together create a surprising flavor combination!

Ingredients

  • 4
    bread rolls
  • 6 tbsp
    plant-based pâté or mayonnaise
  • 1/2
    cucumber peeled into ribbons
  • 1
    carrot peeled into ribbons
  • 15 g
    mint finely chopped
  • 15 g
    coriander finely chopped
  • 1
    lime the juice
  • 4 tbsp
    sriracha or chili sauce
  • 4 tbsp
    hoisin sauce optional

For the tofu

  • 1 block
    tofu the moisture pressed out, in slices
  • 2 tbsp
    soy sauce
  • 1 tsp
    chili flakes
  • 2 tbsp
    oil

Instructions

For the tofu

  1. It is important that the moisture is pushed out of the tofu well so that it absorbs the marinade better. This can be done by placing the tofu between 2 chopping boards and putting something heavy on top for 15 min.

  2. Slice the tofu. Marinate the drained tofu in the soy sauce, oil and chili flakes. Bake in a preheated oven at 180°C until golden brown (20-30 min).

For the roll

  1. Cut a baguette lengthwise and spread with the pâté or mayonnaise. Place the grilled tofu and the vegetable ribbons on this. Top it off with some extra leaves of coriander and mint and serve it with sriracha (or chili sauce) and hoisin sauce.
