Banh Mi sandwich
This delicious, fresh sandwich is popular in Vietnam and combines the flavors of Vietnamese and French cuisine. A French baguette, topped with (French) plant-based pâté and Vietnamese tofu, herbs and vegetables, together create a surprising flavor combination!
Ingredients

4bread rolls
-
6 tbspplant-based pâté or mayonnaise

1/2cucumber peeled into ribbons

1carrot peeled into ribbons

15 gmint finely chopped
-
15 gcoriander finely chopped

1lime the juice
-
4 tbspsriracha or chili sauce

4 tbsphoisin sauce optional
For the tofu
-
1 blocktofu the moisture pressed out, in slices

2 tbspsoy sauce
-
1 tspchili flakes
-
2 tbspoil
Instructions
For the tofu

It is important that the moisture is pushed out of the tofu well so that it absorbs the marinade better. This can be done by placing the tofu between 2 chopping boards and putting something heavy on top for 15 min.

Slice the tofu. Marinate the drained tofu in the soy sauce, oil and chili flakes. Bake in a preheated oven at 180°C until golden brown (20-30 min).
For the roll

Cut a baguette lengthwise and spread with the pâté or mayonnaise. Place the grilled tofu and the vegetable ribbons on this. Top it off with some extra leaves of coriander and mint and serve it with sriracha (or chili sauce) and hoisin sauce.
