Fluffy Vegan American Pancakes

The best vegan American pancakes you will every try! They are fluffy, soft and sweet – all the things you could want in a pancake.

Ingredients

Servings: 9
  • 420 ml
    Soy milk
  • tbsp
    Lemon juice
  • 250 g
    Plain flour
  • 25 g
    Baking powder
  • ½ tsp
    Salt
  • 2 tbsp
    Sugar
  • 1 tsp
    Vanilla extract
  • 42 g
    Vegan butter, melted
  • Refined coconut oil for cooking

Instructions

  1. Combine soy milk and lemon juice, stir, and let it curdle into buttermilk.

  2. In a separate bowl, whisk together flour, baking powder, salt, and sugar.

  3. Into the buttermilk mix vanilla and melted vegan butter. Combine with dry ingredients, stirring gently until just mixed (more lumps = more air bubbles). Let the batter rest for 5-10 minutes.

  4. Heat a nonstick pan with a little coconut oil over medium heat. Spoon batter into the pan (⅓ cup works best) and cook for 2½ minutes on each side.

  5. Serve warm with maple syrup and strawberries – or your favorite toppings!
