Fluffy Vegan American Pancakes

Ingredients

420 mlSoy milk

1½ tbspLemon juice

250 gPlain flour

25 gBaking powder

½ tspSalt

2 tbspSugar

1 tspVanilla extract

42 gVegan butter, melted

Refined coconut oil for cooking
Instructions

Combine soy milk and lemon juice, stir, and let it curdle into buttermilk.

In a separate bowl, whisk together flour, baking powder, salt, and sugar.

Into the buttermilk mix vanilla and melted vegan butter. Combine with dry ingredients, stirring gently until just mixed (more lumps = more air bubbles). Let the batter rest for 5-10 minutes.

Heat a nonstick pan with a little coconut oil over medium heat. Spoon batter into the pan (⅓ cup works best) and cook for 2½ minutes on each side.
