Jackfruit Tikka Masala

Jackfruit tikka
-
800 gJackfruit (2 tins)

1 cupPlant-based yogurt (about 260g)

½ ofSpice blend

1 tbspOlive oil
Masala sauce

1 tbspOlive oil
-
1 mediumOnion diced

1 tbspGarlic minced

½ ofSpice blend

425 mlTomato passata
-
1 cupPlant-based cream
-
1 tspWhite sugar
Optional garnish

Instructions

Mix spice blend and set aside.

Marinate jackfruit in yogurt & half of spice and set in fridge for 20-30 mins.

Sauté onions, garlic, ginger, and remaining spice blend. Add tomato sauce, simmer for 15 mins. Add vegan cream, sugar and simmer for another 5 mins.

Cook marinated jackfruit in a skillet for 5 mins until browned.

Add jackfruit to sauce and cook for another 5 mins.

Garnish with coriander and serve with rice!
