Jackfruit Tikka Masala

Ingredients

Spice blend

  • 1 tbsp
    Garam masala
  • 1 tbsp
    Chili powder
  • 1 tsp
    Turmeric
  • 1 tsp
    Cumin
  • 1 tsp
    Salt
  • ½ tsp
    Paprika
  • ½ tsp
    Coriander

Jackfruit tikka

  • 800 g
    Jackfruit (2 tins)
  • 1 cup
    Plant-based yogurt (about 260g)
  • ½ of
    Spice blend
  • 1 tbsp
    Olive oil

Masala sauce

  • 1 tbsp
    Olive oil
  • 1 medium
    Onion diced
  • 1 tbsp
    Garlic minced
  • ½ of
    Spice blend
  • 425 ml
    Tomato passata
  • 1 cup
    Plant-based cream
  • 1 tsp
    White sugar

Optional garnish

  • Coriander
  • Lemon wedges
  • Rice
  • Naan bread

Instructions

  1. Mix spice blend and set aside.

  2. Marinate jackfruit in yogurt & half of spice and set in fridge for 20-30 mins.

  3. Sauté onions, garlic, ginger, and remaining spice blend. Add tomato sauce, simmer for 15 mins. Add vegan cream, sugar and simmer for another 5 mins.

  4. Cook marinated jackfruit in a skillet for 5 mins until browned.

  5. Add jackfruit to sauce and cook for another 5 mins.

  6. Garnish with coriander and serve with rice!
